Half-packet of Swinborne's Gelatine, 1 pint of Green Gooseberies (or any other Fruit), 6 or 7 oz. Loaf Sugar, and pint of Water. Soak the Gelatine in a quarter of a pint of cold water, and boil the gooseberries in the other quarter of a pint of water, adding the sugar, six or seven ounces, according to taste. After boiling two or three minutes, as soon as the fruit is tender, add the soaked Gelatine and stir till it is dissolved; pour into a basin, and when nearly cold turn it into a mould. This pudding is much liked, being easily made in a few minutes at a trifling cost, and can be had all the year round by using any fruit in season, apples, rhubarb, &c. FRUIT JELLY. One ounce packet of Swinborne's Isinglass or Gelatine, 4 oz. Loaf Sugar, pint Red Currant Jelly, 1 Lemon, 1 pint Water. Soak a packet of Isinglass or Gelatine for ten minutes or longer in a pint of cold water, add half a pint of red currant jelly dissolved in half a pint of hot water, with four ounces of loaf sugar and the juice and peel of a lemon, and stir over the fire till dissolved; strain through muslin, and pour into a mould.
